Taco Bowls

Ingredients:

  • 2.5 lbs of chicken breast
  • 1 12-16oz can of salsa
  • 2 McCormick chicken taco seasoning packets
  • 1 box of rice (cilantro lime rice recommended)
  • 1 white onion
  • 1 bulb of garlic (optional)
  • Cilantro (optional)
  • Avocados (optional)
  • Tortilla chips (optional)
  • Lime juice
  • 2-3 green peppers
  • 1 tomato
  • Shredded cheese

Instructions:

Step 1:

  1. Put chicken in a crockpot on low heat for 8 hours (7 is okay).
  2. Add salsa, chicken taco seasoning, diced white onion, pressed garlic, cilantro, and squirt some lime juice into the crockpot.

Step 2:

  1. About 30 minutes before the chicken is done, dice the green peppers and tomato.
  2. Cook the rice according to package instructions.
  3. Partition the rice and vegetables into 4 or 5 different containers.

Step 3:

  1. Shred the chicken with 2 forks.
  2. Top the bowls with the desired amount of shredded chicken. Leftovers are common.
  3. Top with shredded cheese.

Step 4 (Optional):

  1. Cut up half an avocado and put it in the bowl.
  2. Mix it up.
  3. Crush up about 2-3 handfuls of tortilla chips and put them in the bowl.

Note: Do this right before you eat; the chips may get soggy, and the avocado may go bad fast.
