- Cilantro (optional)
- Avocados (optional)
- Tortilla chips (optional)
- Lime juice
- 2-3 green peppers
- 1 tomato
- Shredded cheese
Instructions:
Step 1:
- Put chicken in a crockpot on low heat for 8 hours (7 is okay).
- Add salsa, chicken taco seasoning, diced white onion, pressed garlic, cilantro, and squirt some lime juice into the crockpot.
Step 2:
- About 30 minutes before the chicken is done, dice the green peppers and tomato.
- Cook the rice according to package instructions.
- Partition the rice and vegetables into 4 or 5 different containers.
Step 3:
- Shred the chicken with 2 forks.
- Top the bowls with the desired amount of shredded chicken. Leftovers are common.
- Top with shredded cheese.
Step 4 (Optional):
- Cut up half an avocado and put it in the bowl.

- Crush up about 2-3 handfuls of tortilla chips and put them in the bowl.
Note: Do this right before you eat; the chips may get soggy, and the avocado may go bad fast.
